Pre Heated oven 180o C
Sift the yolks and eggs. Mix the sugar and the eggs. Add the vanilla extract, the butter (melted) and the coconut. Mix well. Put in a 23-26 cm ring cake pan ( or a round pan).
let it rest for half an hour, 45 minutes (TIP 1- the longer it rests, the better)
Put the baking pan it to the pre heated oven 180o in whater bath/bain marie till it gets steady/firm and golden (30 min to 40 min).
(TIP 2 – the more it stays in the oven the more jelly it gets).
Take it from the cake pan still warm. Let it cool and take it to the refrigerator. Seve cold or room temperature. Serves 20 slices.
You can replace the coconut for 300 gr of sliced and grilled almonds.
